Simple Swiss Steak

I remember when you could find this dish on every family restaurant menu. Not so much these days, although I will occasionally see it on the daily specials menu at my favorite 24 hour restaurant. A popular lunch wagon dish.

US Metric

2 ½ lbs. round steak or top sirloin, 2-inch pieces

½-3/4 c. flour

2 TB vegetable oil

1 medium onion, thinly sliced

1 (8 oz.) can tomato sauce

½ can water (tomato sauce can)

½ tsp. salt

¼ tsp. freshly ground black pepper

Cooking Process:

Place flour in a shallow dish. Dredge steak pieces in flour. Set aside flour. On work surface; with a meat mallet; pound out steak pieces until flattened. In a large skillet over medium heat; brown steak in oil. Remove steak; set aside. Into skillet; sauté onions until browned. Stir in leftover flour from dredging steak with remaining ingredients. Return steak to skillet. Simmer 15-20 minutes until steak is tender. Serve immediately. Serves 4-6.
