Mini Tater Tots

  • 1 Russet potato (raw) cut into 1/8" mini cubes, soaked in salt water
  • 2 Russet potatoes, cooked and mashed
  • 1/4 cup Frank's Wing Sauce
  • 1/4 cup blue cheese crumbles
  • 1/2 teaspoon salt

Cooking Process:

Deep fry or bake wings until nice and crispy.  Combine Sauce and melted butter in bowl.  Toss cooked wings in wing sauce-butter mixture.

Mini Tater Tots

Cook 2 potatoes (microwave for 5 minutes each) then wrap in foil and allow to sit for 3-4 minutes. Peel and cut 1 potato (raw) into mini cubes about 1/8" or smaller.  Allow mini potato cubes to sit in salt water to prevent browning. This will serve as the outer coating for the tater tots.

Peel and mash cooked potatoes in a bowl.  Add salt, wing sauce and crumbled blue cheese. Mix gently.  Drain and rinse raw potato bits and pat dry with a towel.  Form mini balls (any size you want) with the mashed potato mixture then roll in raw potato bits and squeeze to form a ball.  Set formed balls on a cookie sheet lined with waxed or clear wrap.  Once all balls are formed, allow to set in the refrigerator for 30-60 minutes covered.

Heat oil to 350 degrees and fry mini tater tots in small batches until they are golden brown (about 10-12 minutes).

Serve with buffalo wings and a side of your favorite dressing!
