Puffed Rice Cookie (Okoshi)

Those of us who grew up in Hawaii, ate this crunchy, sweet, rectangle puffed rice cookie.

It is a Japanese cookie snack.  Thank  you Sharlyn for the info!

You can find it in packages in many grocery stores, located in the Asian Isle of the market.

Every year my cousin orders these cookies from a lady friend who makes it during the holidays.  So, for Christmas we get a can of puffed rice cookies that we always look forward to receiving.

Prep Time: 10-15 min. | Cook Time: 5-10 min | Ready In: 15-25 min.
Ingredients: Print   Add to cart
US Metric
  • 5 cups puffed rice
  • 1 cup raw peanuts
  • 1 cup sugar
  • 1/2 block butter
  • 1/4 cup Karo syrup

Cooking Process:

Boil all the above ingredients in a pot except the puffed rice.  Stir continuously until ingredients look light brown. Turn off heat and remove pot from stove.  Add the puffed rice and stir quickly.  Finally, put the ingredients in a buttered pan and press evenly.  Wait for about 5-10 minutes for ingredients to harden, then cut into squares.
