A great way to use up rotisserie chicken. A simple and delicious salad for a starter course or entrée.
2 leftover chicken breasts, shredded
6-8 c. mixed greens, lettuces
1 small Japanese seedless cucumber, thinly sliced
1 medium carrot, peeled, julienne strips
½ bunch cilantro leaves
½ (12 oz.) pkg. won ton pi strips or crispy chow mein noodles
½ c. vegetable oil
¼ c. sugar
3 TB white vinegar
½ tsp. salt
½ tsp. freshly ground black pepper
In a jar; combine dressing ingredients. Shake well. Set aside onto serving platter. Toss together mixed greens, lettuces, cucumber, carrot and cilantro. Top with chicken. Drizzle with dressing as desired. Garnish with won ton pi strips. Optional to use fresh won ton pi. Slice into thin strips and deep fry in hot oil. Drain on paper towels. Serves 4-6.
