Red Velvet Pancakes w/Coconut Cream Cheese Icing

Red velvet pancakes with coconut cream cheese frosting - Can't think of a better way to say I love you !!  Perfect for Valentine's or any day!!

US Metric

Red Velvet Pancakes

  • 1 cup all purpose flour
  • 3 teaspoons baking Powder
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 3 tablespoons unsweetened cocoa powder
  • 1 large egg beaten
  • 3/4 cup buttermilk
  • 3 tablespoons butter, melted
  • 4 teaspoons red food coloring

Coconut Cream Icing

  • 1/2 cup coconut cream
  • 4 oz. cream cheese, softened
  • 1/4 cup butter, softened
  • 1/4 tsp vanilla extract
  • 1 cup powdered sugar

Cooking Process:

Pancakes

Add first 5 ingredients in sieve and sift gently.  Add wet ingredients (egg, buttermilk, melted b utter, food coloring.  Mix gently without over mixing.  Heat skillet with oil or butter.  Pour batter onto hot skillet and turn when bubbles appear in batter.

Coconut Cream Icing

Add all ingredients to bowl and mix with electric blender or by hand with a fork.  Set aside at room temperature and top pancakes just before serving.

how to serve:

Top pancakes with icing, fresh fruit, powdered sugar or whatever makes your heart sing!
