Heat guava juice, tomato puree, oyster sauce, butter, shallots, garlic, ginger, coriander, sugar, jam, salt and pepper in small pan until all ingredients are well combined.
Heat oven to 375 degrees.
in a large pan, heat oil and sear short ribs on both sides. Do this in smaller batches to ensure that you get a good sear without overcrowding the pan. Place seared pieces in a large baking pan. Once all pieces have been seared, pour sauce over ribs. Cover with foil and bake for 2 hour and 30 minutes, then another 30 minutes uncovered. Check to ensure that there is enough liquid half way through and add a little water if necessary to prevent burning.
