Sari Sari is a favorite Filipino Soup. Normally a stewed vegetable soup, you will traditionally find it with lechon (crispy roast pork), prawns, squid, pork belly or fish. It is always simmered with the wonderful vegetables familiar to Filipino cooking.
1 lb. crispy roast pork, 1 ½-inch chunks
1/4 lb small shrimp, peeled, deveined
2 TB vegetable oil
1 large onion, sedges
4 garlic cloves, crushed
1-inch ginger, peeled, crushed
2-3 TB patis (fish sauce)
2 TB white vinegar
2 TB tomato paste
1 tsp. salt
6 c. chicken broth
2 large tomatoes, wedges
2 long eggplants, 2-inch pieces
1/2 lb. long beans, 2-inch pieces
1 medium bitter melon, seeded, ½-inch slices
In a large saucepot over medium heat; sauté onion, garlic and ginger in oil.
Add in patis, vinegar, tomato paste, salt and broth. Stir well to combine. Bring to a boil; reduce heat. Add tomatoes, eggplant and long beans. Cover pot; simmer stirring occasionally until vegetables are almost tender. Add bitter melon and shrimp; cook until shrimp are just pink. Taste to adjust seasoning by adding salt or additional fish sauce. Add roast pork and stir until heated through. Do not stir; shake pot instead.
Serve immediately while pork is still crispy. Note: Chinese style roast pork can be used. Serves 4.
