Luau Stew

One of the pleasures of making home made lau lau, is that you will often times have left over luau leaves.  And we all know what that means !! Luau Stew !! While anything made with luau leaves, involves a lengthy process,  you must ensure the long cooking process to avoid an itchy throat reaction  from the undercooked leaves.

Ingredients: Print   Add to cart
US Metric

2 lbs. luau leaves,  rinsed, coarsely chopped

Water as needed

1 TB Hawaiian salt

½ tsp. baking soda

3 TB vegetable oil

2 lbs. bone-in beef brisket or bone-in short ribs, stew size chunks

Salt and freshly ground black pepper, as needed

1 large onion, diced

½ TB Hawaiian salt, as needed

Cooking Process:

In a large saucepot, cover luau leaves with water. Add salt and baking soda. Bring to a rapid boil10-15 minutes until leaves wilt. Drain. Set aside. Generously season meat with salt and pepper. Into saucepot; brown meat in oil. Add onion. Cook 4-5 minutes. Return luau leaves to saucepot; compleely cover with water. Scrape any browned bits from bottom of saucepot. Bring to a rapid boil. Check for seasoning. Reduce heat. Cook for 2 ½-3 hours.
