Sweet Potato Tapioca

A wonderful creamy dessert dish !! Tapioca is a really popular item placed in desserts and lately in drinks. This is a simple recipe combining our local Okinawan purple sweet potatoes for a yummy dessert!

1/2 c. small tapioca pearls

1 c. water

1 lb. Okinawan sweet potatoes, boiled, peeled, ½-inch cubes

1 (12 oz.) can coconut milk

1 c. water

2/3 c. sugar


Cooking Process:

In a mixing bowl; soak tapioca in water 1 hour. Drain any remaining water. In a saucepan over medium heat; combine coconut milk, water and sugar. Cook, stirring, until the sugar dissolves. Add tapioca and sweet potato; bring to a boil. Reduce heat to medium-low. Cook, stirring, until mixture thickens and tapioca becomes translucent, 5-7 minutes. Refrigerate until ready for service. For service; spoon chilled tapioca into serving bowls. Serves 6.
