Vegan Sweet Potato Macadamia Nut Burgers

Ingredients
  

  • 1 large sweet potato cooked 
  • 1 15oz can of chickpeas 
  • 1 15 oz can of cannellini beans or equivalent
  • 1 cup white onion finely diced
  • 1 cup macadamia nuts chopped
  • 3 cloves of fresh garlic minced
  • 1 cup rolled oats
  • 1 carrot grated
  • 2-4 TBSP olive oil
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp curry powder
  • 1/2 tsp salt
  • 1 egg*
  • freshly ground black pepper
  • Butter Lettuce or bun

Instructions
 

  • Bake sweet potato, peel skin and empty potato into bowl.  
  • Drain and rinse beans, add to the sweet potato.  
  • Saute onion in 2-4 tablespoons of oil, add garlic and continue to saute until translucent and tender.  
  • Mash beans and potato, add remaining ingredients and spices and form into patties.  
  • Allow to rest in refrigerator for 30 minutes.  
  • You can boke or grill these. Serve on a bun or as a lettuce wrap.

Notes

*To make vegan, use an egg substitute.
