Grilled Kalbi Ribs by Shane Victorino

Shane Victorino, known as “The Flyinʻ Hawaiian played 12 seasons in major league baseball, where he was a two-time World Series champion (2008 and 2013), two-time All-Star (2009 and 2011) and four-time Gold Glove award winner (2008, 2009, 2010, 2013).  Victorino is a Maui native who was originally going to attend the University of Hawaii on a football and baseball scholarship.
But after his senior year at St. Anthony School, Shane was selected by the Los Angeles Dodgers in the sixth round of the 1999 MLB Draft and decided to pursue a professional baseball career from there.  That decorated winning career would be recognized when his name appeared on the exclusive list of players on the 2021 BBWAA Hall of Fame Ballot.
Victorino responded to the news recently by saying, “I guess it was probably one of the largest ‘pinch me’ moments of my life.  People would say, and understandably so, I was lucky to do a lot of great things in the game of baseball. But to see your name on a ballot with what you consider some of the greatest to ever play the game, it’s definitely humbling.”
 In retirement, Shane and his wife Melissa are giving back through The Shane Victorino Foundation (SVF) which is dedicated to promoting opportunities for underserved youth. The Foundation engages in projects which provide children in need with educational, recreational and wellness programs.

Ingredients
  

  • 3/4 cup shoyu
  • 3/4 cup brown sugar
  • 3/4 cup water
  • 1 clove garlic minced
  • 2 green onions chopped
  • 1 Tbsp sesame oil
  • 2 lbs korean style short ribs

Instructions
 

  • In a bowl, stir together the shoyu, brown sugar, water, garlic, green onions, and sesame oil until the sugar has dissolved.
  • Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.
  • Remove ribs from the bag and grill on hot frying pan.
  • Plate with rice and Kalbi.
