Peanut Beef Dish by Dr. Kyle Caires of the Maui County Farm Bureau
Dr. Kyle Caires, University of Hawai‘i Livestock Agent and Maui County Farm Bureau president is a native of Maui where he grew up on a diversified cattle and asparagus operation. Kyle attended Washington State University where he earned Master’s and Ph. D. degrees in Reproductive Genomics/stem-cell biology. Kyle is the only Hawai‘i native ever selected to judge cattle at the National Western Stock Show, the “Super Bowl of livestock shows.” As President of the bureau, Dr. Caires says they have revised their strategic plan to help Maui County Farm Bureau strengthen a diverse agricultural community by supporting and advocating for Maui’s farm and ranch families.
1.5lbs.Beef steak(sirloin, strip loin, or chuck), thinly sliced into 3/8 inch to 1/2-inch strips
1 Medium Kula onion, sliced 1/4-inch thick
1Tbsp.Vegetable oil
1/3cupSmooth peanut butter
1/3cupShoyu
1/3cup White cane sugar
1Tbsp.Fresh garlic, minced (please no elephant garlic, imparts bad taste)
1small bunchGreen onion, finely chopped
Pinch Hawaiian salt
Instructions
Heat the oil in a large nonstick saucepan pan over medium heat.
Add the onions and garlic then saute stirring occasionally, cooking until soft.
Remove and set aside.
Add sliced beef to pan, add a pinch of Hawaiian salt, and saute to medium rare, stirring occasionally. Turn off heat, remove beef and set aside with the onion and garlic.
Add peanut butter, shoyu and sugar to saucepan. Start heating on medium-high until peanut butter melts, then reduce heat to medium low. Stir with wooden spoon to meld/mix ingredients for 1-2 minutes.
Return beef and onions to pan. Stir to adequately coat the steak evenly. Turn off fire, let rest 1-3 minutes.
Serve over white rice. Garnish with green onion. Enjoy.
