Seared Scallops w/Pineapple Salad

This delicious seared scallops with pineapple salad recipe was provided compliments of world famous Chef Chai of Chai's Island Bistro, Dining Out with Chai & Singha Thai Restaurant.

Ingredients
  

  • 3 pcs Large scallops
  • 1 tsp Salt
  • 2 T Cajun spice mix
  • 1 tsp Salad oil
  • 1/4 Cup Julienne pineapple
  • 1/4 C. Julienne fennel
  • 1/4 C. Julienne red onion
  • 1/4 C. Julienne red bell pepper
  • 1/4 C. Julienne snow peas
  • 1 tsp Orange zest
  • 1 tsp Salad oil
  • 1 tsp Cane vinegar
  • 1 tsp Orange Juice
  • Pinch of ground cardamom

Instructions
 

  • Season the scallops with salt and Cajun seasoning.
  • Heat a sauté pan on high and add in the salad oil.
  • When the oil begins to lightly smoke add in the scallops.
  • Sear for 2 minutes and turn the scallops over and turn off the heat.
  • The remaining heat in the pan will help the scallops cook.
  • While the scallops are finishing the cooking process, start on the pineapple salad.
  • In a medium sized bowl, combine the remaining ingredients and toss lightly.

How To Serve:

  • Place the salad mixture in the center of a plate and top with the cooked scallops.
