Steamed Onaga w/Chung Choi (Salted Turnip)
This is a classic way to prepare Onaga or Hawaiian red snapper ..first by steaming, then searing the fish with hot oil and herbs.

sesame seed oil

chung choi
(salted turnip), rinsed, minced

tsp.
ginger
peeled, grated
1/4 c. + 1/4 c.
green onion
minced

bunch
Chinese parsley
chopped

vegetable oil
Instructions
In a flat dish; combine soy sauce, 1 TB of vegetable oil, sesame seed oil and chung choi.
Dip fish on both sides into mixture.
Place on steamer; top with ginger and ¼ cup of green onion.
Drizzle with soy sauce mixture. Steam 5-6 minutes, until cooked through.
In a skillet over medium heat; warm oil.
Drizzle over fish; top with remaining green onion and Chinese parsley.
How To Serve:
Serves 4.

*
red snapper is a great alternative to onaga. Try to get the fish whole with skin on.
