- 2-3 Japanese long eggplant sliced diagonally
- 2 medium eggs
- 1 tablespoon water
- 1 teaspoon Aloha Aloha shoyu
- 1/2 teaspoon patis (fish sauce)
- 1 cup flour
- 1 cup cornstarch
- Vegetable oil as needed for frying
Garnish:
- Roasted peanuts
- coarsely chopped
In a skillet or deep fat fryer; warm oil.
In a shallow dish; whisk eggs, water, soy sauce and patis well.
In a second shallow dish; combine flour and cornstarch.
Deep fry eggplant pieces until slightly browned.
Drain on paper towels.
