Ingredients
  

  • 2-3 Japanese long eggplant sliced diagonally
  • 2 medium eggs
  • 1 tablespoon water
  • 1 teaspoon Aloha Aloha shoyu
  • 1/2 teaspoon patis (fish sauce)
  • 1 cup flour
  • 1 cup cornstarch
  • Vegetable oil as needed for frying

Garnish:

  •  Roasted peanuts
  • coarsely chopped

Instructions
 

  • In a skillet or deep fat fryer; warm oil.
  • In a shallow dish; whisk eggs, water, soy sauce and patis well.
  • In a second shallow dish; combine flour and cornstarch.
  • Deep fry eggplant pieces until slightly browned.
  • Drain on paper towels.

How To Serve:

  • For service: garnish with peanuts. Serves 4-6.
