Lemon Andagi
Try this twist on the popular andagi or Okinawan donut... the lemon zest gives the donut a fresh zing!

- 4 c. eggs
- 1 1/2 c. sugar
- 1 c. evaporated milk
- 1 TB vegetable oil
- 1 TB lemon extract
- 4 c. all purpose flour
- 1 TB baking powder
- 1/2 tsp. salt
- 1/2 tsp. lemon zest
- Vegetable oil as needed for frying
In a wok or deep fat fryer; warm oil.
In a mixing bowl; combine all ingredients well.
Drop by heaping teaspoonful into oil and deep fry until golden brown.
Drain on paper towels.
