Lemon Andagi

Try this twist on the popular andagi or Okinawan donut… the lemon zest gives the donut a fresh zing!

Ingredients
  

  • 4 c. eggs
  • 1 1/2 c. sugar
  • 1 c. evaporated milk
  • 1 TB vegetable oil
  • 1 TB lemon extract
  • 4 c. all purpose flour
  • 1 TB baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. lemon zest
  • Vegetable oil as needed for frying

Instructions
 

  • In a wok or deep fat fryer; warm oil.
  • In a mixing bowl; combine all ingredients well.
  • Drop by heaping teaspoonful into oil and deep fry until golden brown.
  • Drain on paper towels.
  • Makes approximately 3 dozen.
