Butterfish and Watercress Soup with Hanalei Poi by Mele Apana

She has produced many concerts, events and her big annual Mothers Day show. Her quick wit, loud personality and talent has created her brand over the last 20 years.

Ingredients
  

  • 5 cups Chicken broth
  • 8 Pieces of butterfish
  • 1 bunch watercress
  • To taste Hanapepe salt
  • 3 slices Ginger
  • Hanalei Poi

Instructions
 

  • Put the chicken broth in a large pot and add 3 slices of ginger.
  • Bring to a boil.
  • Add all the butterfish to the pot.
  • Chop up the watercress in 1 inch pieces and add the pot.
  • Cook fish thoroughly.
  • Add salt to taste.
  • Serve with Hanalei Poi.
