Mommy’s Kinpira Gobo
A traditional dish for our family to enjoy on New Year’s day, along with our other Japanese dishes. In my mom’s recipe, you can switch out and use your choice of meat, our family favorite is prepared with the dried ebi or shrimp.

- 2 boneless skinless chicken thighs diced or
- 1/4 lb. top sirloin beef dicedor
- 4 TB dried ebi shrimp
- 2 TB oil
- 3 stalks gobo burdock, peeled, thinly sliced, slivers, soak until ready to use
- 1/4 c. Aloha shoyu
- 5 TB brown sugar
- 2 TB sake
- 1 tsp. chili garlic paste
In a skillet over medium high heat; warm oil.
Stir fry chicken, beef or shrimp 1 minute.
Add gobo; cook 3 minutes.
Stir in soy sauce, brown sugar and sake.
Mix thoroughly and cook until done.
Stir in chili garlic paste. Cook 1 minute.
Serves 6-8.
