Okazuya-Style Corned Beef Hash Patties Recipe
Here in Hawaii, we really gravitate to canned foods. We always have and always will. Corned beef, yet another big selling item here, we have adapted many a recipe to include this item.While it has become a typical item offered as a choice of breakfast meat in restaurants here, I first remember seeing this dish made available at the neighborhood okazuya style restaurant counter. Flavorful crisp fried patties with sweet potato and vegetables.

- 1 medium potato boiled, peeled
- 2 medium potatoes boiled, peeled,½-inch dice
- 1 sweet potato boiled, peeled, ½-inch dice
- 1 medium onion minced
- 1 medium carrot peeled, grated
- 1 (12 oz.) can corned beef
- 2 large eggs
- pinch freshly ground black pepper
- 3/4 c. all purpose flour
- oil for frying
In a shallow dish; place flour. Set aside.
In a mixing bowl; mash whole potato.
Add remaining ingredients well.
Shape into desired size patties. Dredge lightly in flour.
In a skillet over medium heat; fry patties in oil until browned on both sides.
