Quick Nabeyaki Udon
A quick and comforting bowl of udon with broth is always a welcomed meal in my home.

- 4 pkg. instant pre-cooked udon noodles
- 1/2 (5-6 oz.) kamaboko (steamed fish cake), thinly sliced
- 4 stalks green onion 2 inch pieces
Garnish:
- bits of tenkasu (tempura scraps)
Dashi:
- 6 c. water
- 1/3 c. Aloha shoyu
- 2 TB mirin
- 4 packets udon seasoning
In a saucepan over medium high heat; bring water, soy sauce, mirin and seasoning packets to a boil.
Into serving dishes; place udon, kamaboko and green onion.
Ladle dashi into dishes.
Garnish with tenkasu (bits of fried tempura batter).
