Quick Nabeyaki Udon

A quick and comforting bowl of udon with broth is always a welcomed meal in my home.

Ingredients
  

  • 4 pkg. instant pre-cooked udon noodles
  • 1/2 (5-6 oz.) kamaboko (steamed fish cake), thinly sliced
  • 4 stalks green onion 2 inch pieces

Garnish:

  • bits of tenkasu (tempura scraps)

Dashi:

  • 6 c. water 
  • 1/3 c. Aloha shoyu
  • 2 TB mirin
  • 4 packets udon seasoning

Instructions
 

  • In a saucepan over medium high heat; bring water, soy sauce, mirin and seasoning packets to a boil.
  • Into serving dishes; place udon, kamaboko and green onion.
  • Ladle dashi into dishes.
  • Garnish with tenkasu (bits of fried tempura batter).

  • Serves 4.
