Japanese-Style Wafu Dressing I

Japanese Restaurants all have their signature salad dressing. All quite similar, but yet different. A few local restaurants have now begun to bottle and sell their popular dressings.
Good served with cold tofu, cold noodle salads, mixed green salads, even as a dipping sauce for dumplings, teppan yaki. The uses are endless. You will want to make batches of this to share.

Ingredients
  

  • 1 c.  Aloha shoyu
  • 2/3 c. rice wine vinegar
  • 1/3 c. sesame seed oil
  • 1/3 c. sugar
  • 1/3 c. fresh lemon juice
  • 1 (1.05 oz.) bag bonito flakes

Instructions
 

  • In a mixing bowl; combine all ingredients. Cover and refrigerate overnight.

How To Serves:

  • For service: Strain, keep refrigerated.
  • Makes 2 1/3 cups.
