SWEET POTATO MOCHI PATTIES
Most of these never make it to the table. Yummy mochi treat that’s fried! The sweet potatoes add such a great flavor and texture to this dessert good to snack on all day long.
- 4 c. Okinawan sweet potatoes (purple), boiled, peeled, mashed
- 1 1/2 c. mochiko flour (sweet glutinous rice flour)
- 1 c. all-purpose flour
- 1 1/4 c. water
- 1/4 c. butter, melted
- 2 1/4 c. brown sugar
- oil for frying
In a mixing bowl, combine flours, water and butter.
Stir in potatoes and sugar.
Shape into patties.
In a skillet over medium heat; sauté in oil until lightly browned on both sides.
Drain on paper towels.
