Henry Kapono's Lomi Opae

I can't believe that one of my music idols Henry Kapono is on Cooking Hawaiian Style.  I grew up listening to Henry Kapono - C&K - It was such a blessing to be able to meet him and his amazing family.  Try this amazing and simple recipe of Lomi Opae.

Ingredients
  

  • 2 - 3 Ripe Tomatoes
  • 1/3 Sweet Maui Onion
  • 1 Cup Dried Opae (shrimp)
  • Hawaiian Salt to taste
  • 4 tablespoons rice wine vinegar
  • 1 piece ginger, grated
  • green onions, chopped
  • 1 -2 tablespoons hot chili pepper water (or chopped chili pepper)

Instructions
 

  • Cut tomatoes, onions in to bite-sized cubes, mix all ingredients and massage mixture.
  • Serve chilled.
