Mahi Mahi Burgers w/Serrano Mango Salsa
Summertime is always time to fire up the grill and this time I'm doing it slightly healthier with delicious mahi mahi burgers topped with a serrano chile salsa.

- 1 lb.  mahi mahi fillet cut into chunks
 - 1/4 cup  cilantro chopped
 - 2 tablespoons  oyster sauce
 - 2 tablespoons  mayonnaise
 - 1/4 cup  sliced green onion
 - 2  teaspoons  minced fresh ginger
 - 1 clove garlic minced
 - salt and pepper
 - 2 tablespoons  vegetable oil
 - 2 teaspoons  sesame oil
 
Serrano Pepper & Mango Salsa
- 1 mango (Ripe, diced)
 - 1/4 purple onion small diced
 - 1 juiced lime
 - 1 tablespoon  rice wine vinegar
 - 1 serrano pepper finely chopped
 - 1/4 cup cilantro finely chopped
 - pepper
 - salt
 
 
Combine cilantro, oyster sauce, mayonnaise, green onions, ginger, garlic, salt and pepper in a food processor. 
Pulse until finely chopped add mahi mahi and continue pulsing until a mousse forms. Split into 4 patties and separate with wax paper or cling wrap. 
Chill for 1 to 4 hours and allow patties to set.  You can speed this up by putting them in the freezer for 15-20 minutes.
Heat vegetable oil and sesame oil in a large skillet over medium-high heat or a well oiled grill. 
Add the fish burgers and cook for 3 minutes per side or until just cooked through. 
Serve on a bun with your favorite toppings or mango salsa.
