- 4–5 beef shanks
- 6 cups beef broth
- 1 onion
- 1 tomato
- 2 bunches bok choy
- Hawaiian salt
- Garlic powder
- Black pepper
Bring the broth, beef shanks, onion, and tomato to a boil.
Add the bok choy stems and simmer about 3 hours.
Remove the bones once the meat is tender.
Add the leafy greens and simmer another 10–15 minutes.
Season with Hawaiian Salt, garlic salt, and Pepper to taste and serve over hot rice.
