Glazed Blueberry Bundt Cake
This blueberry bundt cake recipe is perfect for breakfast, coffee time or dessert!
Ingredients
- 1/2 c. butter softened
- 1 c. sugar
- 3 large eggs
- 1 tsp. vanilla extract
- 2 c. all purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. sour cream
- 2 c. fresh blueberries
Glaze:
- 1 c. confectioners sugar
- 2 TB milk
Instructions
- Preheat oven to 325 degrees.
- Generously grease and flour a bundt cake pan.
- In a mixing bowl; cream together butter and sugar, add eggs one at a time, beating well after each addition.
- Add vanilla. Onto waxed paper; sift dry ingredients. Into butter mixture; stir in dry ingredients alternating with sour cream, ending with flour.
- Fold in blueberries.
- Spoon into prepared pan. Bake 45-50 minutes, until toothpick inserted comes out clean. Invert onto cooling rack.
Glaze:
- In a mixing bowl; combine sugar and milk until smooth.
- Spoon onto cooled cake.
