Guava Jam Roll
Guava jam rolls, my favorite holiday treat. It reminds me of Christmas morning buffets where all of our family would gather to open presents and eat our favorite holiday foods for breakfast!
Ingredients
- 5 eggs room temperature, separated
- 1/2 + 1 cup + tablespoon white sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/8 teaspoon salt
- 1/4 teaspoon cream of tartar
- 4 tablespoons powdered sugar divided
- 1/2 cup guava jam
Instructions
- Preheat oven to 450 degrees F with the rack in the middle.
- Add egg yolks and ½ cup sugar to bowl and beat on high speed until thick and pale (about 5 – 6 minutes). Add in essence and continue to beat to incorporate. The batter when lifted should fall back like ribbons. Set aside.
- Add egg whites to bowl and whisk until foamy. Now add the salt and cream of tartar and continue to beat until you get soft peaks. Gradually add the 1 tablespoon of sugar while whisking and continue to whisk until the egg whites become stiff (firm peaks) and glossy.
- Sift and gently fold the flour into the beaten yolks.
- Add one-third of the egg whites to the yolk-flour mixture and gently fold in first then add the remaining egg whites and fold until just incorporated.
- Pour batter into pan and use icing spatula to smooth evenly.
- Bake for 7 minutes or until golden brown (a toothpick when inserted should come out clean).
- Spread kitchen towel on a clean surface and dust with icing sugar. As soon as the cake comes out of the oven, invert the pan onto the dusted surface, remove the parchment paper, sprinkle with icing sugar and roll up and place on a wire rack to cool completely.
- Unroll the cooled sponge cake, spread with jam in an even layer. Roll up the sponge cake again. Wrap in plastic wrap and let sit for at least 6 hours so that the roll can set. You can put it to chill in the refrigerator if you like but be sure to bring it to room temperature before dusting with icing sugar or granulated sugar before serving. Slice with a serrated knife.
