Chow Fun Noodles by Aric Nakashima
One of the last of Maui’s true mom-and-pop establishments, the Superette has been serving Upcountry Maui for over 60 years and is still going strong under ownership of Aric and Myles Nakashima, grandsons of the founders. Pukalani Superette, or Puk Sup (Pook Soop) as regulars have nicknamed the store offers prepared hot and cold foods, ready-to-eat items and shoppers can also find bundled firewood, chicken feed, diapers, lentils, greeting cards, fresh flowers, cough drops, extra virgin cold press olive oil, ice, beer, coconut water, baked goods and the list goes on. Most of the fresh produce comes from local farmers and is packaged for individuals, couples and small families. It’s a place where you don’t have to buy more than you need. And unlike some of the big stores, the shelves are almost always well stocked. “We’re that size where it’s small enough where you can see the whole store, sort of like your house,” Aric explained. Ingredients
- 1.5 lbs ground pork
- 4 lbs chow fun noodles (fully cooked Sun Brand)
- 1 Tbsp fresh chopped garlic
- 2 1/2 tsp garlic salt
- 1 tsp black pepper
- 3/4 cup oyster sauce
- 1 cup carrots shredded
- 1/4 cup green onion chopped
Instructions
- Chop garlic.
- Brown ground pork with fresh chopped garlic, garlic salt, and pepper in large wok.
- Shred carrots, chop onions.
- Once pork is brown add carrots, oyster sauce and green onions. Mix well.
- Add noodles.
- Continue to mix well throughout the cooking process, should cook for 2 minutes or until golden brown.
- Serve and Enjoy!

- Makes 4 lbs. of noodles.

Aric has been one of my best friends since 1968. We
Graduated together in 1971 at the old Maui High school. Every time I go back to visit Maui, the first thing I do is pick up my Rent-A-Car and drive straight to the Pukalani Superette and get an order of chow fun, chili chicken, roast pork and macaroni salad. Their hot prepared Foods are some of the best things I’ve ever eaten in my life and I love them more after 57 years than I did in 1968. Aric is one of the finest people I have ever known in my life. He is very knowledgeable about cooking all the recipes that come out of the Pukalani Superette. I am very proud to say that he is a great friend of mine!
