Vegan Sweet Potato Macadamia Nut Burgers
Looking for a healthy bite that packs a lot of punch and will fill you up? Try these sweet potato burgers or keep it light as a lettuce wrap.
Ingredients
- 1 large sweet potato cooked
- 1 15oz can of chickpeas
- 1 15 oz can of cannellini beans or equivalent
- 1 cup white onion finely diced
- 1 cup macadamia nuts chopped
- 3 cloves of fresh garlic minced
- 1 cup rolled oats
- 1 carrot grated
- 2-4 TBSP olive oil
- 1 tsp cumin
- 1 tsp garlic powder
- 1/2 tsp curry powder
- 1/2 tsp salt
- 1 egg*
- freshly ground black pepper
- Butter Lettuce or bun
Instructions
- Bake sweet potato, peel skin and empty potato into bowl.
- Drain and rinse beans, add to the sweet potato.
- Saute onion in 2-4 tablespoons of oil, add garlic and continue to saute until translucent and tender.
- Mash beans and potato, add remaining ingredients and spices and form into patties.
- Allow to rest in refrigerator for 30 minutes.
- You can boke or grill these. Serve on a bun or as a lettuce wrap.
Notes
*To make vegan, use an egg substitute.
