Som Tom Papaya Salad by Kimberly Ashley
Kimberly Ashley is a flight attendant from Hawaiian Airlines, Cooking Hawaiian Styles, cargo and travel partner. Kimberly shares that this recipe reminds her of her mom who made it at least once a week for the family and was a favorite dish for parties, picnics and any gathering. Also, when she started at Hawaiian Airlines her first, first class experience was serving Som tom to her passengers so this recipe is a go to for her.
Ingredients
- 2 Thai chili
- 2 Cloves garlic
- 1 TBSP Palm sugar
- 1 TBSP Dried shrimp
- 2 TBSP Fresh lime juice
- 1 TBSP Fish sauce
- 8 Grape tomatoes
- 1 Med Shredded papaya
Garnish:
- Romaine lettuce leaves
- Roasted peanuts
- Cilantro
- Lime wedge
Instructions
- Peel & shred papaya.
- Place in bowl of cold water.
- In mortar pound garlic, chili , sugar, dried shrimp into paste.
- Add tomatoes, slightly smashed.
- Add lime juice and fish sauce.
- Remove papaya from ice water and add to mortar.
- Lightly pound mixing all ingredients well.
- Place lettuce in shallow bowl for presentation and mount on top.
- Sprinkle with slightly crushed peanuts.
- Garnish with cilantro and lime wedges.

- Serves 4-6.
