Sapasui by Marvin Tevaga
Marvin Tevaga is a husband, father of 5, Maui police officer, musician and Lahaina resident. Marvin was born and raised on the island of Maui where his love for music began. He comes from a family of Polynesian entertainers and at eight years old, he picked up the ukulele for the first time; 30+ years later he is still strumming away! Uncle George Kahumoku, Marvins high school teacher at Lahainaluna High School, gave him his very first ukulele that he still has today. In a full circle kind of way, Marvin is a resource officer at Lahainaluna High School. When he is at work, you can find him singing and playing music with the students. It's how he communicates with them and says you would be amazed at how music can bring people together.
Ingredients
- 250 g Vermicelli noodles
- 300 g Chicken meat
- 2 tbsp. Peanut oil
- 1 Large white onion
- 1 cup Soy sauce
- 2 Carrots
- 1 tbsp Grated ginger
- 1 cup Water
- 1 Chicken stock cube
- to taste Pepper
Instructions
- Heat your peanut oil in a pan and on a medium heat add crushed garlic, chopped onion and ginger.
- Once the garlic starts to slightly brown, add your meat and carrots cut into matchsticks, and leave to cook.
- In a separate pot cook your vermicelli noodles according to the instructions on the pack.
- To the meat add your soy sauce, a cup of the noodle water and your stock cube, and let it simmer for 5 minutes.
- Once your noodles are cooked, snip them to around 5cm long and stir them in to the mix.
- If needed, add more soy sauce and water in small doses to get your required consistency.
- Add pepper to taste and serve.
