Butterfish and Watercress Soup with Hanalei Poi by Mele Apana
Hailing from the island of Kauai radio personality, Mele Apana. Mele not only can be heard on Hawaiian105 in the morning but also hosting a radio show on Hawaiian Airlines. Ingredients
- 5 cups Chicken broth
- 8 Pieces of butterfish
- 1 bunch watercress
- To taste Hanapepe salt
- 3 slices Ginger
- Hanalei Poi
Instructions
- Put the chicken broth in a large pot and add 3 slices of ginger.
- Bring to a boil.
- Add all the butterfish to the pot.
- Chop up the watercress in 1 inch pieces and add the pot.
- Cook fish thoroughly.
- Add salt to taste.
- Serve with Hanalei Poi.
