Teriyaki Smoke Meat by Jerry Correa
I was lucky enough to meet Jerry Correa, a local boy from Kauai, while working on the Show Aloha Challenge Campaign this year. Jerry is President & CEO of Saint Francis Health Care System of Hawaii, Hawaii's only Catholic health care system. Jerry and his team are providing much needed essentials for our senior communities and 2020 has definitely expanded the need for their work.
Ingredients
- 1 small pork butt
- 1 cup aloha shoyu
- 1 cup sugar
- Crushed garlic
- Crushed ginger
Instructions
- Cut your pork butt into slices.
- Combine with ingredients in a bowl.
- Marinate in the refrigerator for 2 days.
- Smoke for 2 hours at 200°.
