A Japanese tradition in the islands is to begin the New Year with Soup made with mochi cakes and mizuna. This dashi recipe is the perfect stock for that dish.
Ingredients
- 5 c. Water
- 6 dried shrimp
- 1 piece dried whole squid
- 2 small squares dashi kombu (thick dried kelp)
Instructions
- In a large pot, bring ingredients to a boil.
- Reduce heat and simmer for 30 minutes.
- Strain.

- Makes 5 cups.
