A Japanese tradition in the islands is to begin the New Year with Soup made with mochi cakes and mizuna.  This dashi recipe is the perfect stock for that dish.

Ingredients
  

  • 5 c. Water
  • 6 dried shrimp
  • 1 piece dried whole squid
  • 2 small squares dashi kombu (thick dried kelp)

Instructions
 

  • In a large pot, bring ingredients to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Strain.

How To Serve:

  • Makes 5 cups.
