Papaya Macadamia Biscotti Recipe
I love a nice piece of biscotti in the morning so I decided to try making something different. I made this macadamia biscotti using sweetened, dried papaya. Candied fruit is the perfect addition to any biscotti.
Ingredients
- 4 cups self rising flour sifted
- 1 3/4 cups sugar
- 2 eggs
- 3 egg yolks
- 3 tablespoons melted butter
- 1 cup candied papaya small cubes
- pinch of salt
- 1 cup Island Princess Hawaii Macadamia nuts roughly chopped
- 1 teaspoon of vanilla bean paste
Instructions
- Beat the eggs with sugar and vanilla.
- Add the flour, butter,salt, candied mango and macadamia nuts.
- Shape the dough with floured hands to form into two logs and bake at 300 for 35 minutes.
- Cool at room temperature for 10 minutes.
- Slice into 1/2" pieces, reduce oven to 275 degrees and bake for another 10 minutes until crisp and golden.
Notes
Be sure the candied papaya is in small enough cubes. If not, cut into smaller pieces.
