Grammas Green Dessert by Shannon K. I’i

Great work Shannon! Today in the kitchen Shannon says she chose to share this dish because it reminds her of her grandmother. She made so many cool treats but this was by far her favorite and most easy to make. This was her grandmother's go to potluck dish for every church event she attended. When Shannon realized it had cottage cheese in it she thought she wouldn't like it but when it was complete and she got to lick the spoon she absolutely loved it!
Ingredients
- 3 lb tub of cottage cheese
- 16 oz tub Cool Whip (thawed)
- 3.4 oz pistachio instant pudding Jell-O mix
- 15 oz can fruit cocktail (drained)
- 20 oz can lychee (drained)
Optional Add-ins:
- Marshmallows
- Chopped nuts
- Fresh fruit (e.g., sliced bananas)
Instructions
- Add the tub of cottage cheese into a large bowl.
- Add the pistachio pudding Jell-O mix to the cottage cheese. Mix thoroughly until there are no lumps and the pudding mix is fully dissolved.
- Fold the thawed Cool Whip into the mixture until evenly combined.
- Drain the juice from the fruit cocktail and canned lychee. Add the drained fruit to the bowl and mix gently with the other ingredients.
- Chill the dessert in the fridge for approximately 2 hours, or until fully chilled.
Notes
Enjoy as is or with optional add-ins like marshmallows, chopped nuts, or fresh sliced bananas for extra flavor!
