Spam & Creamy Corn Stuffing Casserole
A great way to make a new dish using Thanksgiving leftovers… this is a stuffing casserole with a sweet, creamy corn and spam center!!
Ingredients
- leftover Thanksgiving stuffing or box of stuffing mix
- 4 tablespoons butter
- 1/2 pint milk
- 2 tbsp flour
- 1 can sweet corn drained
- 1 can Spam diced
- 2 tablespoons freshly chopped parsley
- Salt and ground black pepper
- 1/4 cup freshly grated Parmesan
Instructions
- Preheat oven to 350 degrees.
- Make the stuffing mix with boiling water, according to pack instructions, stirring in half the butter or use leftover stuffing.
- Press the mix over the base and sides of the casserole dish.
- Pour the milk into a pan and whisk in the flour, then add the rest of the butter. Bring to the boil, whisking continuously to make a thick, smooth sauce.
- Add the sweet corn and Spam, parsley, and season. Spoon the mixture into the middle of the stuffing, sprinkle with cheese and bake for 25-30 minutes.
