Crispy Coconut Cookies

These cookies come out extra crispy, crunchy and thin…absolutely delicious!

Ingredients
  

  • 1 cup butter or margarine
  • 1 cup sugar
  • 1 tsp. vanilla
  • 2 cups flour
  • 1-1/3 cups shredded coconut

Instructions
 

  • Preheat oven to 300 degrees F.
  • In a large bowl of electric mixer, cream butter and sugar.
  • Add vanilla;  beat thoroughly. 
  • Mix in flour. 
  • Add coconut;  mix well. 
  • Shape into balls the size of walnuts.
  • Place on ungreased baking sheets and flatten with the bottom of a glass dipped in flour.
  • Bake for 20-25 minutes.
  • Makes 4 dozen.

    Most excellent coconut cookie. I love a good crisp cookie with the perfect sweetness and doesn’t require a lot of ingredients. This cookie fits the bill. Made a batch for my husband to take to his parents who live out of state. They are in for a real treat!!

    Just found your recipe. Can’t wait to make the them. Do you use regulate sweetened coconut flakes or unsweetened?     Hi, I’m celiac and I love coconut cookies so I tried this with my gluten-free flour mix and it’s fantastic. I mixed one cup of King Arthur , almond flour, with 1 cup of King Arthur 1 to 1 and xanthan gum. They came out really awesome. I weigh the flour, makes a big difference in the finished product.
    Make sure you use the proper weight for each flour. Google weights 😍😍😍😍😍🥥🥥🥥🥥🥥🥥🥥🥥
