These turned out great. The only difference I made was to add some coconut extract. They were very similar to Tates coconut cookies.

Most excellent coconut cookie. I love a good crisp cookie with the perfect sweetness and doesn’t require a lot of ingredients. This cookie fits the bill. Made a batch for my husband to take to his parents who live out of state. They are in for a real treat!!

Just found your recipe. Can’t wait to make the them. Do you use regulate sweetened coconut flakes or unsweetened? I’m giving 5 stars in advance because this is exactly what I was searching for…a recipe similar to Tate’s coconut cookies and precious comment confirms they taste just like Tate’s. Thank you.

Omg . These are delicious! I used 1/2 white sugar and 1/2 brown sugar and the vanilla I cut in half and used coconut extract for the other half. Deeeliciousness!

I made these cookies following the recipe exactly and it did tasted great. They’re nice and crispy but, I think the dough is a little dry and crumbly. Next time I make this, I would add an egg.
