A cute way to use up all of your extra Easter eggs – dress them up like baby chicks hatching out of their shells.
Ingredients
- Leftover Easter Eggs
- Mayonnaise to preference
- Chopped onions (optional)
- Relish (optional)
- Mustard (optional)
- Carrot (for beaks)
- Olive pieces (for eyes)
Instructions
- The nice thing about this recipe is that you can make your filling however you wish…onions, pickle relish, mayonnaise, mustard…hot sauce…what ever strikes your fancy.
- The trick is not to use too much mayo so that the consistency of the yolk is thicker and not runny.
- Peel eggs and cut eggs in half using a zig-zag pattern to replicate an egg shell that has been hatched.
- Remove the egg yolks and place into a bowl.
- Mash the egg yolks and mix with your favorite ingredients.
- Stuff each egg white bottom and crown with top piece.
- Garnish with black olive eyes and orange carrot beaks.
