Kalbi Ribs by Les Tomita

I did a lot of entertaining when I was younger, so I just wanted to make a plate lunch nicer, fancier –and that’s what this is ,“said Les Tomita. Now located in the charms of Kihei, Da Kitchen is once again thriving with lines out the door. Les Tomita shares his popular recipe for Kalbi Ribs which sells out daily.
Ingredients
Marinade:
- 20 ribs thin cut
- 4 cups warm water
- 2 cups sugar
- 2 cups shoyu
- 1 cup sweet chili sauce
- 1 cup sweet chili sauce
- 2 TBSP smashed garlic/ginger mixture
- 1/2 orange
Plating Ingredients per serving:
- 1 Large scoop cooked white rice
- 1/2 cup cabbage chopped
- 1 stalk green onion chopped
Instructions
- Pour all ingredients in a big bowl, make sure sugar is completely melted away before adding in the chili sauce and garlic/ginger mixture. Squeeze ½ orange into the mixture.
- Add ribs, cover and place in refrigerator for at least 24-36 hours.
- Pre-heat a pan at medium high heat (if no grill available).
- Shake off marinade from ribs then place in pan.
- Flip sides a few minutes into the cooking.
- Cook until meat is still pink but not bloody by bones.
- Ready to plate.
Plating:
- Flatten a large scoop of rice on the bottom of a plate.
- Add cabbage to the plate.
- Add kalbi on the top of rice and cabbage.
- Sprinkle chopped onions over the top.

- Serves 4-6.
