Amaulu Chicken Curry by Chad Cabral

We have a very special guest doing great things in the Hilo community. Chad Cabral CEO of the Boys and Girls Club of the Big Island joins us in the Cooking Hawaiian Style kitchen. He created an after school program to feed kids who need meals.
The program cost families $10 a year and he has figured out a way to get the rest covered through donations. They are not providing snacks but hot meals with a kitchen that was funded by federal grants. Chad and his staff have already provided an estimated 28K meals since 2017.

Ingredients
  

First -Brown/Sauté  (in the InstantPot):

  • 5 – 7 pieces Chicken Thighs with skin and bone-in about 5-7 pieces
  • 1 large Onion regular
  • 5 cloves Garlic
  • to taste Garlic Salt
  • to taste Pepper

Add-in and Sauté:

  • 1 large mild Portuguese Sausage

Then Add-In:

  • 3-4 cups Beef Broth
  • 1 can Diced Tomatoes
  • 1 small bag (12 oz.) Carrots
  • 3 stalks Celery
  • 3-4 small/medium sized Purple Sweet Potatoes
  • 1 can Pinto Beans
  • 1 can Dark Red Kidney Beans
  • 1/2 a head Cabbage
  • 1 Block Mild Curry Block

Instructions
 

  • Set Instant Pot to “Meat/Stew” setting for a 35-minute pressure cook.
