Smoked Ahi Dip by Chef Jayson Asuncion

Jayson Asuncion is the Executive Chef of Royal Lahaina Resort. He is a native of Maui and is from Lahaina. He developed his passion for cooking as a child helping his father in the kitchen. Asuncion trained at Western Culinary Institute in Portland, Oregon and has over 20 years of experience on the West Coast and Maui.
He had the opportunity to work at Citrus in Los Angeles, opening team of Spago Maui, Banyan Tree Ritz Carlton Kapalua, Molly’s Restaurant San Diego and Bonavista at Westin Bonaventure Hotel. 
Jayson Asuncion is also the co-founder of the Aloha Braised food truck, which serves tasty local delicacies. Outside of the kitchen Asuncion enjoys surfing and playing his ukulele, where he gains profound inspiration.

Ingredients
  

Ahi Cure:

  • 8 oz ahi
  • 1 tbsp kosher salt
  • 1/2 tbsp granulated sugar
  • Zest of 1 orange

Dip:

  • 16 oz cream cheese
  • 1.5 oz crème fraîche
  • 4 oz mayonnaise
  • 1 tbsp finely sliced chives
  • 1 tsp granulated garlic
  • 1 tsp Worcestershire sauce
  • 1 tsp Tabasco
  • 1 tsp lemon juice
  • 1 tsp salt

Instructions
 

Ahi Cure:

  • Rub the ahi with salt, sugar, and orange zest.
  • Let sit for 5 minutes.
  • Smoke in a pot over medium heat using a puka pan with mesquite chips for 15 minutes, or until cooked through.
  • Set aside to cool.
  • Once cooled, shred into medium-sized flakes.

Dip:

  • Combine all dip ingredients in a bowl.
  • Mix well.

Combining:

  • Mix the smoked ahi with the prepared dip.

Plating:

  • Take one large scoop of the ahi dip mixture.
  • Garnish with 1 tablespoon of ikura.
  • Serve with 4 oz of pickled red onion and 4 oz of shrimp chips on the side.
