Crispy Coconut Cookies
These cookies come out extra crispy, crunchy and thin…absolutely delicious!
Ingredients
- 1 cup butter or margarine
- 1 cup sugar
- 1 tsp. vanilla
- 2 cups flour
- 1-1/3 cups shredded coconut
Instructions
- Preheat oven to 300 degrees F.
- In a large bowl of electric mixer, cream butter and sugar.
- Add vanilla; beat thoroughly.
- Mix in flour.
- Add coconut; mix well.
- Shape into balls the size of walnuts.
- Place on ungreased baking sheets and flatten with the bottom of a glass dipped in flour.
- Bake for 20-25 minutes.
- Makes 4 dozen.

These turned out great. The only difference I made was to add some coconut extract. They were very similar to Tates coconut cookies.
Most excellent coconut cookie. I love a good crisp cookie with the perfect sweetness and doesn’t require a lot of ingredients. This cookie fits the bill. Made a batch for my husband to take to his parents who live out of state. They are in for a real treat!!

Omg . These are delicious! I used 1/2 white sugar and 1/2 brown sugar and the vanilla I cut in half and used coconut extract for the other half. Deeeliciousness!

I made these cookies following the recipe exactly and it did tasted great. They’re nice and crispy but, I think the dough is a little dry and crumbly. Next time I make this, I would add an egg.
Hi, I’m celiac and I love coconut cookies so I tried this with my gluten-free flour mix and it’s fantastic. I mixed one cup of King Arthur , almond flour, with 1 cup of King Arthur 1 to 1 and xanthan gum. They came out really awesome. I weigh the flour, makes a big difference in the finished product.
Make sure you use the proper weight for each flour. Google weights 😍😍😍😍😍🥥🥥🥥🥥🥥🥥🥥🥥
