Edamame Hummus
Edamame has become such a popular item here. You will find it used in various stir fry recipes, in soups and even in casserole dishes. A unique change to the typical chickpea hummus, you can now find versions of Edamame Hummus in your local grocery stores. Very healthy and tasty.
Ingredients
- 2 c. edamame, shelled
- boiling water as needed
- 1 clove garlic
- 4 stalks green onion, chopped
- 2 TB Aloha shoyu
- 2 TB lime juice
- 2 TB rice wine vinegar
- 2 TB mirin
- 1 TB tahini
- 1 tsp. wasabi powder
- 1 TB olive oil
- 1 TB sesame seed oil
- 1/2 tsp. salt
Instructions
- Place edamame in a colander.
- Pour boiling water over edamame.
- Drain.
- In a food processor; place all ingredients.
- Pulse until smooth. Season with salt.
How To Serve:
- Serve with pita chips, crudites.
- Makes 2 cups.
