Fried Eggplant Recipe
A quick and easy side dish – Eggplant coated in a flavorful egg wash and flash fried to golden crisp!
Ingredients
- 2-3 Japanese long eggplant sliced diagonally
- 2 medium eggs
- 1 tablespoon water
- 1 teaspoon Aloha Aloha shoyu
- 1/2 teaspoon patis (fish sauce)
- 1 cup flour
- 1 cup cornstarch
- Vegetable oil as needed for frying
Garnish:
- Roasted peanuts
- coarsely chopped
Instructions
- In a skillet or deep fat fryer; warm oil.
- In a shallow dish; whisk eggs, water, soy sauce and patis well.
- In a second shallow dish; combine flour and cornstarch.
- Deep fry eggplant pieces until slightly browned.
- Drain on paper towels.
How To Serve:
- For service: garnish with peanuts. Serves 4-6.
