Ube Swirled Haole Brownies by Relle Lum
Relle Lum is a nurse practitioner in Maui where she was born and raised. In her spare time she loves to cook and bake. She is a self taught, home cook that describes her recipes as easy to follow so that anyone can learn to make and share them. Relle was one of nine home cooks in a compeition show on PBS called The Great American Recipe where she made Hawaiʻi proud with her local cuisine. Today Relle is married with two beautiful children whom she prides herself in raising as adventurous eaters. Aside from having a sweet tooth Relle was a picky eater as a youngster so she decided to expose her children to many types of food so they could determine for themselves what they liked. Relle Lum shares one of her favorite desserts, ube swirled haole brownies, on Cooking Hawaiian Style.
Ingredients
- 1 1/4 cup Light brown sugar
- 1 cup Sugar granulated
- 1 1/4 stick Butter unsalted
- 1/2 tsp Salt
- 2 cups Flour all purpose
- 1 1/2 tsp Baking powder
- 3 Eggs
- 1/4 cup Ube halaya
- 1 tsp Ube extract
Instructions
- Pre-heat oven to 375F.
- In the bowl of a stand mixer combine brown sugar, granulated sugar, butter and salt.
- With a paddle attachment mix until well combined, light and fluffy.
- Add flour and baking powder to bowl.
- Stir until just incorporated.
- Add eggs and mix until incorporated.
- Do not over mix.
- Remove ¼ of the batter and place in a small bowl. Add ube halaya and ube extract. Mix well.
- Pour plain batter in a greased 9×13 baking dish.
- Dollup the ube batter in the pan and swirl with a chopstick.
- Bake for 25 minutes or until golden brown.
- Cool and enjoy.
